Charsi Chicken Karahi
Charsi Chicken Karhai is a popular dish from a specific restaurant in Peshawar. Named after the founder of the restaurant, itβs cooked with very simple ingredients, its amazingly flavorful and very easy to make!
Ingredients :-

2 lb chicken, cut into small pieces.

1 lb whole tomatoes.

8 green chilis β cut in half.

2 tsp salt.

3β4 cup ghee.

3β4 cup oil (I prefer avacado oil but any cooking oil works) .
Directions :-

In a wok or karhai, add the oil and ghee and heat it up on medium-high heat.

Once the oil is hot, add the chicken in, stirring occasionally until it starts to brown up (about 10-15 minutes) .

Add the tomatoes in, whole, reduce heat to medium-low and cook covered for 10-15 minutes.

At this point the tomatoes should soft.

Carefully remove about half the oil/ghee.

Mash the tomatoes to form a gravy, and add in the salt and chilis.

Increase heat and stir-fry until the oil separates out (about 5 minutes) .

Serve with hot naan.
